Alone at home and Have to feed myself...oh the Horror!

So, the kids are finally gone. My mom and dad took them home and spent the weekend because it's their anniversary and my dad's birthday. So after I attended Caribana and spent a night with the best friend, I spent Sunday, sleeping in, washing the car, putting gas in it and running errands. I even drove down to the lake and sat there for a few minutes just staring at the water. After that, I got my fill of cajun (or near as I can get in this city) food and headed home. I spoke to the BFF, ate my fast food I watched my Blue Jays win (yay!). I took a nap...omg that nap was so good it was almost orgasmic.

When I woke up, I talked to the best friend some more (well duh) and finally I realised...hrm, its almost six, I haven't eaten and I had to feed myself! I mean what a concept! I haven't had to really feed myself Sunday dinner in so long...let me stress. Sunday dinners in a Jamaican house is a huge deal. We cook the good stuff because we don't have time during the week to have family dinner. So on Sundays, we live it up.


After the chicken was cleaned
 So, I dug through the freezer found some chicken and cleaned it up.  It took a while since it was a last minute deal and things were frozen.  But I let it sit for a while in some water, talked to the best friend some more and then finally I was able to clean up the chicken.  First, I washed it in clear water and after cleaning off as much of the other stuff as I could, I washed it in water with a some lemon, then rinsed it again.

I know, I washed it a lot, but growning up I was always taught to wash it as much as I can because meat sits around for heaven knows how long before its actually packaged and blah blah blah food poisoning, blah blah blah.  Anywho,  this mean you can make with basically any part of the chicken but I would suggest the breasts or the legs. The wings doesn't have as much meat as you'd need.  Anywho, after it was cleaned up, I put on a frying pot, that's what we call it but I think you guys call it a skillet? I don't know a pot that you fry in. My family uses a cast iron one and its amazing.  So, you put it on and let it sit on the fire for a bit...you need it to get REALY hot then pour in some canola oil--am talking so hot that you can see waves in it.  While this is happening, drain the chicken. Take it out of the water, you may want to get a bunch of paper towels and pat it dry. If you don't want to do that, then drain it as best you can then place them on a flat plate to drain more.  When they are drained, sprinkle with salt, and ground pepper.

Once the oil is hot, put the chicken pieces in. Do not drop them in because the last thing any of us want is a face full of hot oil. Once all the pieces are in, cover it. Because once chicken is frying it tends to pop...again, face full of hot oil is no fun. And do not fry in a short sleeve shirt or lingerie... ok going in. Once in a while, go in and turn the meat. Make sure it's burning on each side. Once that's done, pour off all the oil.  Some people take the chicken out, pour off the oil then put the chicken back in. Some, who's had more  practise, just pour off the oil with the chicken still in the pot.  Which ever is safer for you. Becareful to wipe off excess oil from the outside of the pot before placing it back on the burner. You don't want an oil fire.

 In a small bowl, add soy sauce, a little bbq sauce (you can use Ketchup but it doesn't give it the same umph) and mix by adding water.  Add enough water that when you pour it in, it doesn't cover the chicken but is a good amount.  Add onion, butter or margerine.  Now, I don't really like tomato so I didn't add alot but a small, yellow one, you can add red one to add colour etc.  Anyways, cover it again and let it simmer, soaking to the chicken. Turn the pieces over from time to time to ensure they don't stick. If you find the water boils down too low before the chicken has had a chance to soak through, add water to it. Do not add any more soy sauce because this is salty and that could ruin your food. It won't really change anything to add a little water. Make sure you have some water boiled and sitting in the kettle and if you want to add water to meals being cooked, add hot or warm water. Cold water slows down the boil.

Once you're the meat is ready, what we do is get some water and add some flower. The water has to be cold before you add the flower. You can also use corn starch but corn starch taste funny to me. Moving on, do it right before you need it, otherwise it will settle and you'll have to mix it again. Don't make it too thick. Add it the meat and make sure it's mixed in. I suggest using a large spoon and add the mixture of flour water a little at a time. This makes the liquid thick and makes your gravy.

Turn the stove on low and let it simmer a little bit. Make sure you taste it from time to time to make sure you have enough spice and salt. Make sure it's not missing anything.  Make sure when you poke the chicken it doesn't run red. If it runs red, you need to add more water and let it simmer some more.  You don't want red, red is bad. Red means food poisoning...
When the crackers are added

Once its done simmering, get the hard crackers--they're made by Excelsior--it's a Jamaican brand.  But these crackers have a hard crunch...you can find them in a West Indian grocery store.  Turn the stove way down, and drop them on the top of the meat. Don't mix them in, just spread them across the top. If you mix them in they are going to suck up the gravy and get soggy. Cover the put.  Let it sit like that for about ten to fifteen minutes to let the steam make the crackers soft.  Go mix your drink or watch some TV or something and just let the steam and the spice from the heat soak through the crackers.  When you're ready to eat, the crackers will be soft, and splitting open from the heat. That's precisely what you want.  Put a piece of the chicken on a plate, then scoop out some crackers.  Adding the gravy on top of that with the cooked onions and tomato. Sprinkle the gravy across the crackers, now is when you want the gravy to be mixed with the crackers. Now you don't want to eat this cold, you want it to still have some steam to it when you sit down to eat it.

 And this is what I had for dinner! It was yummy! Just don't tell my family. They're going to start thinking I am mature enough to take care of myself..pfffft

  4. Just let me know what you would like and I will see what I can do for you. It will have to wait for a couple of weeks, until we get back from vacation. We will actually be pretty close to the Canadian border in St. Ignatius Montana. We are mainly going to see everyting, but are also going to be staying a couple of days with an old friend of mine and his partner. They have been together for about 5 or 6 years I think and run a horse ranch up there. It's been over 25 years sine I last saw Mark and I have never met Wes, but I don't think I will have any problem enjoying myself. I will say it will be somewhat different for both me and Randy because although we have been around several female couples and are close friends with them, we have never been around a male couple. I know it will not bother me any at all because I am very open minded. I also know that even if it does make Randy uncomfortable, he will handle it well and never say anything to hurt either of them. I'm slowly opening him up to new things since I started reading m/m novels, so it will be easier for him.
    Anyway, back to food, just send me a list of what you want and I will get it to you as soon as I can.
    Sure do wish while you are down here in Feb, we could meet.
    Believe it or not, even though I am 45, I have never been to a Mardi Gras parade, never really cared to. I'm sure you want to party in New Orleans, but there is a little town about 30 minutes from where I live that is supposed to have one of the best Mardi Gras around. Several of my inlaws go every year and they love it. And, it is a lot safer than New Orleans. It is about an hour or so from Lafayette. If you are interested, let me know or look it up online, the town is Mamou, Louisiana. I bet, even though it is a really small place, you would like it a lot.

  6. I think you would like Mamou, they have a chicken run out in the rice fields. From what I read, it's mostly locals who go to that, but they welcome all. The celebration they have there I think lasts for 3 or 4 days and ends the day before Lent. It seems a lot more down to earth that what all goes on in New Orleans, but again, I have never been, it's only what I've read and heard about. But I do know there's a LOT less crime that goes on, I don't think you have to worry about someone coming up behind you and knocking you in the head or worse. I think you would really like what they have here and again, I would love to be able to meet you and show you around a little. I think you could find sexy men, wherever you go!
    As for our trip, I know we won't be going up into Canada, but maybe up into Glacier Park, not sure yet. When my two oldest kids were younger, my brother used to take them in trips. One summer, they took them up into Canada, they saw Niagara Falls from both sides and had a ball. I don't remember where all they went, I think it was just a day trip, but not sure.
    If you decide to go to Mamou, keep me updated, but if you do and can't find a hotel room in Lafayette or Opalousas, we have 2 pretty nice ones here in Oakdale, one just built in the last 2 years and it would be closer to Msmou anyway, hint, hint!!!
